A sophisticated evolution of the classic Farmhouse style. Hayfield 2023 was fermented with a complex blend of wild yeasts and bacteria, then matured in oak casks previously used for Yasnogorodka Red Wine. This 2023 vintage has developed a remarkable depth during its time in the wood.
The profile is quintessentially "wild" - expect a rustic bouquet of fresh-cut hay and tart green apples, balanced by a moderate, crisp acidity. The red wine barrel imparts an elegant tannic structure and a slightly dry, vinous finish that lingers beautifully on the palate.
